If you’ve stopped into Starbucks recently, you might’ve spotted a new offering in the display case that you’d actually feel good about getting for breakfast. (Sorry, blueberry scones.) We’re talking about Sous Vide Egg Bites.
What are they, exactly? The name might sound fancy, but they’re basically mini frittatas with tasty fillings like bacon and Gruyere or roasted red pepper and spinach. Thanks to the eggs, they’re loaded with protein to keep you full and make you less likely to, say, crave a donut mid-morning. They’re also cooked sous vide-style, meaning the vacuum-sealed food is immersed in water and cooked at a precise, even temperature. According to Starbucks, this is good because you don’t need to add any extra fat.
Unless you’re a contestant on Top Chef, you’re probably not going to be sous vide-ing your eggs at home anytime soon. But you can still make Egg Bite-style mini frittatas at home with a mini muffin tin. Like the ones at Starbucks, the eggs pack a protein punch. And who cares if you need a little bit of fat to cook them? This isn’t 1996—we know there’s no need to skimp on healthy sources of fat.
