Vegan Raw Massaged Kale Recipe

I enjoy making this because it is nutritious, delicious, and doesn’t take a lot of time—key for a lazy cook like myself.

This has less than five ingredients, so less hassle, like going through the fewer than 20 items lane at the grocery store.

This is fun, too. Have you ever massaged kale, before? If you think this is fun, children will think it’s 100 times more fun!

Eat, love, and laugh—what more can we ask for?

Ingredients:

1 bundle of kale

1/2 cup olive oil

1/4 cup apple cider vinegar

salt and pepper to taste

Directions:

Wash and dry kale. Chop kale (leaves and stems) into bite-size pieces. The stem can be chopped even smaller to be easier to chew and also to make them more appetizing. Place into a glass bowl. Add the olive oil and apple cider vinegar. Add salt and pepper to desired taste.

With clean hands, massage the kale, as if kneading out tight knots in the shoulders and neck! Don’t be afraid to use some muscle. Kale is tough. And the more you massage it, the more the flavors will soften the kale fibers making it easier to digest. It will also taste less bitter and the olive oil and vinegar flavors will sink in.

The kale will turn a darker and deeper green with the massaging.

After massaging the kale about 5 to 10 minutes, wash hands, cover bowl, and place it in refrigerator to cool for 10 minutes before serving.

Note: Apple cider vinegar may be substituted with another desired acidic liquid such as lemon juice.
